Slow Cooker Vegetable Beef Soup
This is the kind of easy comfort food that makes the whole house smell amazing! Just load everything into the slow cooker and let it do the work. Hearty, filling, and packed with beef, potatoes, corn, green beans, carrots, peas, and tomatoes.
Ingredients:
• 1 lb ground beef, browned and drained
• 3 cups diced potatoes
• 1 can mixed vegetables, drained
• 1 can whole kernel corn, drained
• 1 can diced tomatoes
• 1 can green beans, drained
• 1 can tomato sauce
• Salt and black pepper, to taste
• 1 tsp dried Italian seasoning
• 2–3 cups beef broth, as needed
Directions:
1. Brown the ground beef and drain off any excess grease.
2. Add the potatoes, beef, mixed vegetables, corn, tomatoes, green beans, and tomato sauce to the slow cooker.
3. Pour in enough beef broth to reach your preferred soup consistency.
4. Season with salt, pepper, and Italian seasoning.
5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are tender.
6. Stir well, taste, adjust seasoning, and serve hot.
Simple ingredients, one slow cooker, and a big bowl of homemade comfort!
