Soft & Chewy Oatmeal Cranberry Cookies

These oatmeal cranberry cookies have become one of my favorite recipes because they’re everything a great cookie should be—soft in the center, lightly crisp around the edges, and packed with cozy flavors. The tart cranberries perfectly complement the rich brown sugar, while the oats add a hearty texture that makes every bite satisfying. And if you decide to toss in white chocolate chips, you'll get little pockets of creamy sweetness that make them even more irresistible.

Ingredients
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup dried cranberries
- 1 cup white chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until the mixture becomes light and creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the rolled oats, dried cranberries, and white chocolate chips until evenly incorporated.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
- Bake for 10–12 minutes, or until the edges are lightly golden and the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Storage Tip: Store the cookies in an airtight container at room temperature for up to 5 days to keep them soft and chewy. They also freeze beautifully, making them perfect for preparing ahead.
